Dairy free fairy cakes

One of the things that had me worried about having to have Babygirl on this strict dairy free diet (I explain why we’re doing it in this post about her milk protein allergy) was what to do about cakes and birthdays.

It was Granny’s birthday this week and I decided to risk trying dairy free fairy cakes.

You need the following ingredients

125g dairy free spread
125g self raising flour
125g caster sugar
1 teaspoon baking powder
2 eggs
2 tablespoons of oat milk
1/2 teaspoon of vanilla essence

 

Cream together the spread and sugar so it looks light and fluffy, like this.

 

Add in the eggs and beat them in until the mixture is all smooth, like this.

Add in the flour and baking powder and mix until smooth again, then pop in the vanilla essence and add a splash (about 2 tablespoons) of oat milk to thin the mix a bit.

Then spoon into fairy cake cases.

Cook at 200 centigrade for 10 to 15 minutes or until nicely brown.  Do not do what I did and put the grill on rather than the oven resulting in them not cooking quite right and the tops being a little over done!

Wait until a bit cooler and then let the ravenous beasties at them!
